Sautéed onion, garlic, cumin, chili powder and oregano simmered with

white beans, chopped turkey, diced tomatoes, green chiles,

cilantro and lime juice - thickened with pureed white beans

 

Tuesday- January 27, 2009

Chicken Meatballs Soup with Pasta

Meatballs of diced onion, garlic, ground chicken, Parmesan cheese, parsley,

breadcrumbs, garlic and egg added to soup of chicken stock, celery, peas, whole

kernel corn, carrots and small pasta shells

French Onion Salisbury Steak

Seasonal Vegetable

Patties of ground chuck, parsley, herbs and spices, dredged in seasoned

flour and browned - simmered in a sauce of caramelized onions, garlic, beef stock,

red wine and thyme. Served with baked cheese toasts.

Shredded Pork and Sweet Potato Empanadas

Empanada dough stuffed with filling of shredded seasoned pork, mashed sweet

potatoes, seasoned black beans, cilantro and ground cinnamon - brushed with glaze of

chipotle and honey - baked till golden

Shrimp and Broccoli Fried Rice with Toasted Almonds

Crisp-tender broccoli and red bell pepper tossed with sautéed shrimp, ginger,

garlic, soy sauce, and chicken stock - added to stir-fried Basmati rice and finished

with toasted almonds
